All About LowCarb-Resource.com

Welcome to LowCarb-Resource.com!

This site is maintained by me, Lee, a working gal who has struggled with weight problems for over 20 years! I have been prone to weight gain since my teens and actually was quite chubby in Jr. High School. In High School, however I lost quite a bit of weight and managed to keep it off for many years, mostly by eating teeny tiny portions and watching the fat and calories.

Then, as I hit my mid 30's the weight started to creep back on. At the time, I had quit smoking and was compensating for that by eating lots of chocolate. I figured anything was better than starting to smoke again so I let myself eat whatever I wanted. At one point, I would eat my supper and then polish off an entire package of Oreo's - doublestuffed too!

Then during one of my yearly exams, my doctor pointed out that I had been gaining 10 pounds a year for the past several years and would be approaching 200 pounds in just a couple of years. I realized that I had to do something! Not only was I overweight, I was tired all the time, my asthma and allergies were terrible and I was depressed. I started to try to control my eating by cutting the calories but I soon found that what worked for me in my 20's did not work as well in my late 30's. I was starving all the time and still gaining weight! I couldn’t shake the food cravings.

I started to read every diet book on the market and eventually made my way around to the Atkins Diet Revolution. I was fascinated and the book made sense to me. I tried the diet plan outlined in the book but only lasted 2 days on it - I had terrible headaches and felt sick. Feeling even worse about failing another diet I ran to the store and devoured an entire package of Pepperidge Farm Cookies. But one thing I did notice during those 2 days was that I did have a bit more energy and wasn’t as hungry as usual. That stuck with me as did the information from other diet books about how sugary “processed” foods and foods with white flour were unhealthy. Gradually I reduced the amounts of those types of foods and started to gain back some energy. My asthma and allergies improved greatly and I could actually get through most days without almost falling asleep at my desk. And best of all I stopped gaining weight!

I felt so much better by just cutting back on processed foods, I decided to try a low carb diet again. This time, I did not have the horrible headaches (I imagine since I didn't have as much "poisons" to purge from my system) but I couldn’t stick with it for more than 4 days as I really don’t like meat that much. After the 4 days I just couldn’t stomach it anymore. Eating that much meat made me feel sick so I opted to change my eating habits to incorporate as much low carb foods as I could.

Basically, I try to not eat anything with white flour or sugar. I eat a lot of fruits and vegetables and low carb foods made from packaged mixes. I am trying to limit my meats to chicken and fish but I do love hamburger and steak so I have those more often than I should. Since I did not follow any induction phase I didn’t see a huge weight loss, but I have realized a very slow steady drop in the scale (about ½ pounds a week). I attribute this to the fact that I am actually eating less since I don’t get hungry much anymore and I get filled up on much less when I watch the carbs in my meals.

The wide variety of packaged foods and mixes available have been a godsend to me and have given me an alternative to a meat heavy eating plan. I don't think I would have been able to stick to a low carb plan without them. So, I have put this site together with the focus of such foods, food reviews, where to buy them and a bit of low carb diet info along with tips.

I am happy with my slow weight loss, but even better than that I have a ton more energy now and am able to do more things and enjoy life a little better. I don't know if taking this approach would have the same results for anyone else but if you can't stomach the "induction" phase what have you got to lose?
