Low Carb Mashed Potatoes

Is there such a thing as low carb mashed potatoes? How about low carb desserts?

Are you on a low carb eating plan but still craving comfort foods?

Well, you may still be able to enjoy the satisfying taste of these well loved foods but you’ll have to get creative!

We all know there is no such thing as low carb mashed potatoes, or low carb desserts – the carbohydrate count in sugars and starchy vegetables is just too high, but with a little substitution you may be able to come up with a close second!

A good substitute for low carb mashed potatoes is cauliflower. Cauliflower has about 3g net carbs in ½ cup so you can fill up your plate with the healthy substitution. When making it, you need to be careful to squeeze all the water out of the cauliflower so it is not too mushy and to cook it just right so it isn’t lumpy!
