Ingredients

4 Boneless Skinless Chicken Breasts
2 Eggs
1/4 tsp Salt
½ tsp pepper
1/4 cup soy flour or Atkins Bake Mix
1 ½ tablespoons Teaspoons Olive Oil
6 OZ Mozzarella cheese (part skim if you want to save on fat)
2 Tomatoes
1/8 tsp Oregano
1/8 tsp basil
2 Cloves of Garlic, minced

To Make The Sauce - Heat 1 tablespoon of the olive oil, crush the garlic and add to heated oil cooking on medium for about 7 minutes. Process the tomatoes in a food processor until they are chunky and saucy. Add processed tomatoes, oregano and basil to olive oil and garlic mixture. Cook on medium heat stirring frequently 15 minutes. Season with salt and pepper if you want.

To Make The Low Carb Chicken Recipe - Pound the chicken breasts until they are about 1/4" thick. In a bowl, lightly beat eggs with a tablespoon or 2 of water. Season the chicken with the salt and pepper, dip into the egg mixture and coat in the flour or Atkins Bake Mix. Heat 1 tablspoon oil in skillet - saute chicken breasts until golden brown and no longer pink on the inside. Place breasts in pan and top with sauce and then the mozzarella cheese. Put under broiler until cheese is melted.

Each piece of chicken will have about 8 g carbs.
